Veggie Nuggets

A delicious alternative to chicken nuggets! 
Perfect for Vegetarians and picky eaters <3 

You will need 
1 cup brown rice 
 1/3 cup chopped carrots
1/4 chopped lettuce
3 heaping tablespoons of garlic hummus
1 teaspoon dried onion powder
1 teaspoon cumin 
1 teaspoon basil 
1/3 cup breadcrumbs
extra breadcrumbs for coating

Any other veggies you'd like to finely chop cup and throw in the mixture! 

  • Cook your rice according to the directions of the package. 
  • Allow to cool slightly, pour into a large bowl and mix in your veggies and spices
  • Add breadcrumbs and spices into the mix, stir up with a plastic spatula 
  • Toss in your hummus and mix well! 
      
  • Have your extra breadcrumbs ready in a bowl
  • Begin forming your rice/hummus mixture into small patties with your hands. (i shaped mine into hearts)
  • Cook the patties on a heated, and greased grittle until breadcrumbs have a nice golden brown color.

Serving suggestions- Apples of any sort, Pictured below are some slices cooked in maple syrup.
